Hello, every birdy. Today not only are going to be talking about a recipe that can be so different depending on what veggie you choose. We are also going to be talking about a bird character. She is not like Mika in the fact that I have decided on my own that he was a bird. N, the first time you see this character she is literally in her crane form.
Xianyun is the character that I am going to be talking about today. She was one of the hardest people to figure out what to make simply because she doesn’t necessarily need to consume mortal dishes. She just wants to spend time with her family. She has adopted two mortal daughters who are playable characters in the game, Ganyu and Shenhe.
Now, again I had no idea what to make because what do you make when someone says they don’t really need food?
After a while of think I thought that veggie pancakes would be the perfect thing to make for her. Because they are simplistic, they can be eaten around the table and they are oh so filling.
I am going to share with you some veggie pancakes that can be used again and again with so many different ways.
This is going to be a recipe for 1 batch fill free to increase or decrease depending on size. This recipe will probably give you approximately 8 pancakes. I usually triple or quadruple the recipe simply because we have so many people in our house and if we don’t eat them all that night (which we never do) we can have them for lunches.
Things that are always going to need:
- 1 cup of flour
- 1 egg
- 2 tablespoon oil (whatever oil you have on hand)
- ¾ cup milk
- ½ teaspoon salt
- 3 teaspoons baking powder
Protien of choice:
I have used
- Canned chicken
- Pulled cooked chicken
- Canned pork
- Beans (pinto and black)
Veggie of choice:
- Cabbage
- Potato
- Zucchini
- Carrot
When deciding what to use. Look in your pantry and in wherever you store your produce and see what needs to be used up the most. This way you are saving on food waste.
For these Pancakes I made zucchini canned chicken pancakes. And everyone loved them.
You make the pancakes like you would if you were making normal ones.
In your bowl and in your flour, egg, oil, milk, salt, and baking powder.
Now you are going to grate your zucchini. You can use as many or as few as you can. I believe I used about 3 medium sized zucchini’s for my big match of pancakes. So with the amount of veggie trust your gut. If you think you need more add it.
I almost always will add in a protein to a dish like this because I have found that protein helps me manage my scoliosis pain. So I will access what protein we have in the pantry and in the fridge. If I find that we have cooked chicken in the fridge that needs to be used up before it goes bad I will use that before using the can. But it always depends.
If you want to add spices you can add that to it before putting them on the griddle. Because of my mom and her love for Korean Chili Flakes I am almost always using that. I mean it is not just her love at this point. We all love them so much.
Heat your griddle to about 350 F. Bake for about 2-4 minutes on one side. Or until small bubbles start to form. Flip and cook on the other side for about the same amount of time.
Now for the dressing. You could eat them without anything. But then it really wouldn’t be a pancake. Because who really wants to eat a dry pancake?
You are going to want to put a good amount of Mayo into a small bowl. Add some soysauce to the mayo and stir it together. This seems like an odd combo but it just feels so right. The flavor enhances the pancake so much.
Once you have everything together you can eat it and enjoy.
I hope that you like this recipe. There are definitely going to be more like this in the future. Feel free to check out some of my previous recipes. Remember to like and subscribe for more unique recipes and stories. Thank you.
