The “baking therapy” discussed on this blog refers to my personal experience using baking as a self-help and relaxation tool.”

Hey, everybirdy! It is time for another zucchini recipe, and I am not even sorry. I am completely obsessed with zucchini right now. When the results are this delicious and comforting, it is hard to stop. This recipe is a classic from my archives that I am bringing back into the spotlight for our baking therapy series.
One thing you should know about me is that I always get my zucchinis fresh from the farmers’ market. There is something special about using produce straight from the local stalls—it feels more connected to the earth and our community. This bread is a beautifully spiced, tender take on a traditional quick bread, which just means it does not require any yeast to get that perfect rise. It is ideal for a cozy morning treat with your coffee or a sweet afternoon snack.

The Baking Therapy Experience
Baking does not have to be complicated to feel like a luxury. For me, the true value of this recipe isn’t found in a store aisle, but in the quiet moments spent at the kitchen counter. Taking time to grate the fresh zucchini, feeling the weight of the mixing spoon, and watching simple ingredients transform into two warm loaves is a form of mindfulness.
As the scent of cinnamon and nutmeg fills your home, it creates an immediate sense of warmth and comfort. This process is about slowing down, working with your hands, and creating a rustic treat that brings pure joy to your morning routine. It is my favorite kind of therapy, and it yields a sweet reward that you can share with the people you love.

The Baking Therapy Math Breakdown
Transparency about costs is a big part of how we bake here. To keep things budget-focused, here is the full financial breakdown for this batch using store-brand staples and food-bank-friendly ingredients:
Food Bank Value: $4.80 total cost
Estimated Store Cost: $12.50 total cost
Yield: 2 Full Loaves (16 total slices)
Total Cost ($4.80) divided by 2 Loaves = $2.40 per Loaf
$2.40 per Loaf divided by 16 Slices = $0.15 per Slice

Ingredients You Will Need
- 2 cups Zucchini, grated (always fresh from the market)
- 3 large Eggs
- 0.75 cup Vegetable oil (or any neutral oil)
- 1 tbsp Vanilla extract
- 2 cups All-purpose flour
- 1.5 cups Granulated sugar
- 1 tbsp Ground cinnamon
- 0.5 tsp Ground nutmeg
- 1 tsp Salt
- 2 tsp Baking soda
- 1 cup Pecans or walnuts, chopped (optional add-in)

Simple Step-by-Step Instructions
- Preheat and Prep: Heat your oven to 350°F (175°C) and grease two 8×4-inch loaf pans.
- Whisk the Wet: In a large bowl, vigorously whisk together the eggs, oil, and vanilla extract until smooth, then fold in your shredded zucchini and optional nuts.
- Combine the Dry: In a separate bowl, sift together the flour, sugar, cinnamon, nutmeg, salt, and baking soda.
- Mix the Batter: Gently pour the dry ingredients into the wet mixture and stir with a spatula until just combined. Be careful not to overmix; the batter should be thick!
- Bake to Perfection: Divide the batter evenly between your two prepared pans. Bake for roughly 60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Enjoy: Let the loaves rest in their pans for 10 minutes before turning them out onto a wire rack to cool completely before slicing.

Questions & Robby
Should I squeeze the moisture out of the zucchini first?
No! For this particular recipe, you actually want all that natural hydration. The water in the zucchini is exactly what keeps this bread so unbelievably moist for days without needing extra butter or milk.
Can I make this without the nuts?
Absolutely. If you have an allergy or just prefer a completely smooth texture, skip the pecans entirely. The bread will still bake up perfectly spiced and delicious.
