The “baking therapy” discussed on this blog refers to my personal experience using baking as a self-help and relaxation tool.”

Hey, everybirdy!
Today we’re making a dessert that feels like summer in a 9×13 pan. This Peach Poke Cake is incredibly simple, light, and refreshing. Whether you’re looking for a reliable family dessert or a last-minute treat for a gathering, this recipe hits the mark every time without breaking the bank.
This recipe actually came to me in a dream while I was sleeping! I was looking for a way to make a unique dessert using just what I had in the cupboard, and this “dream cake” turned out exactly right. It’s the perfect example of how store-bought staples can transform into something truly special.

📋 Baking Therapy: Mindful Moments
Baking is its own kind of therapy. There is a quiet rhythm to the process—poking holes into a warm cake and watching a silky pudding mixture soak deep into the center. It’s a reminder to fill the gaps in our own days with something sweet. This cake isn’t about professional perfection; it’s about the intention and joy you put into making something delicious for yourself or your loved ones.

💡 Robby’s Quick TipsThe 2-Minute Rule:
For the best texture, time your medium-speed mixing for exactly 2 minutes. This helps create a balanced crumb that can hold all that delicious peach-pudding filling.
Poke While Warm:
Don’t wait for the cake to cool completely! Adding the pudding mixture while the cake is still slightly warm helps the flavors soak in much better.
Toasted Texture:
If you have some shredded coconut in the pantry, try toasting it! It adds a wonderful crunch that contrasts perfectly with the soft fruit and creamy pudding.Don’t Waste the Juice: When you drain your canned peaches, save that syrup! Folding a little into your pudding mixture is the secret to getting a deep peach flavor in every bite.

Sprinkle with toasted coconut or an extra dollop of whipped topping before serving!

💬 Q&R: Questions & Robby
Q: Can I use different fruit?
Robby: Absolutely! Peaches are classic, but canned pears, pineapple, or even a mix of berries would work perfectly with the vanilla pudding base.
Q: Do I have to refrigerate it?
Robby: Yes! Because of the milk and pudding filling, this cake should be kept in the refrigerator. It actually tastes even better the next day after the flavors have had time to settle!.
