Hey, Everybirdy! Welcome back to the nest.

Today, we are making a holiday staple that is as stress-free as it gets: 2-Ingredient White Chocolate Peppermint Bark. When life gets busy during the holidays, baking therapy doesn’t need to involve a multi-step project or hours standing over an oven.

There is a simple, satisfying mindfulness in this recipe—from crushing candy canes to release that bright mint aroma, to gently spreading smooth, melted white chocolate across a baking sheet. It’s a quick 10-minute project that instantly brings holiday cheer without any of the kitchen mess or pressure.

Before we jump in, you can read my personal updates, deep dives, and exclusive sneak peeks of my upcoming book over on Substack.

The Essentials

You only need two basic ingredients to make this festive holiday gift:

  • 12 oz White Chocolate Chips (or Melting Wafers): High-quality white chocolate or almond bark yields the smoothest melt.
  • 1/2 Cup Crushed Candy Canes (about 6–8 peppermint candy canes): Brings that iconic festive crunch and minty contrast.

Let’s Get Baking

  1. Prep the Tray: Line an 8×8-inch baking pan or small cookie sheet with parchment paper or wax paper.
  2. Crush the Peppermint: Place your candy canes inside a heavy-duty sealable plastic bag. Use a rolling pin to crush them into a rustic mix of fine dust and crunchy peppermint bits.
  3. Melt the Chocolate: In a heat-safe bowl, melt the white chocolate in the microwave in 30-second intervals, stirring thoroughly between each burst until completely smooth and glossy. (Or use a double boiler over low heat!)
  4. Combine & Spread: Stir half of the crushed candy canes directly into the melted white chocolate. Pour the mixture onto your parchment-lined pan and spread it evenly into a 1/4-inch thick layer using a spatula.
  5. Top & Set: Sprinkle the remaining crushed candy canes evenly over the top, pressing them down very gently into the warm chocolate so they adhere.
  6. Chill & Snap: Pop the tray into the refrigerator for 20 to 30 minutes until completely firm. Once set, lift the parchment paper and break the bark into rustic, uneven shards!

Questions & Answers

Why did my white chocolate seize or turn clumpy when melting?

White chocolate is delicate! Heat it slowly in short 30-second increments and make sure no water drops get into the bowl, as water causes chocolate to seize into a grainy paste.

Can I add a dark chocolate layer to make a two-tone bark?

Yes! Melt 6 oz of dark or semisweet chocolate first, spread it onto the pan, and let it set in the fridge for 15 minutes. Then pour the melted white chocolate peppermint layer right over top before chilling again!
