There is something so delightfully festive and grounding about infusing a sweet, tender cookie dough with bubbly champagne. The soothing process of creaming the butter, rolling out the dough, and frosting each cookie with a hint of sparkling flavor gives you a moment to pause, breathe, and reflect on how far you’ve come.

The Essentials

This recipe uses classic baking staples elevated with a touch of bubbly:

For the Champagne Sugar Cookies:

  • 1 Cup Unsalted Butter: Room temperature for a tender, melt-in-your-mouth crumb.
  • 1 Cup Granulated Sugar: Adds just the right amount of sweetness.
  • 1 Large Egg: Room temperature to bind the dough smoothly.
  • 1 Teaspoon Vanilla Extract: Brings warmth and depth.
  • 3 Tablespoons Champagne (or Pink Champagne): Adds a subtle, fruity-bubbly note to the dough.
  • 3 Cups All-Purpose Flour: The sturdy base for roll-out cookies.
  • 1 1/2 Teaspoons Baking Powder: Gives a gentle, soft lift.
  • 1/2 Teaspoon Salt: Balances the sweetness.

For the Champagne Glaze & Topping:

  • 2 Cups Powdered Sugar: Sifted for a silky icing.
  • 2–3 Tablespoons Champagne: Whisked into the sugar for a sparkling shine.
  • Sparkling Sugar or Sprinkles: Optional, for that extra celebratory finish!

Let’s Get Baking

  1. Cream the Butter & Sugar: In a large mixing bowl, beat the room-temperature butter and granulated sugar on medium speed until light and fluffy (about 2–3 minutes).
  2. Add Wet Ingredients: Beat in the egg, vanilla extract, and 3 tablespoons of champagne until well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, mixing on low speed just until a cohesive dough forms.
  4. Chill the Dough: Divide dough into two discs, wrap tightly in plastic wrap, and chill in the refrigerator for at least 1 hour. (Chilling prevents spreading and makes rolling out stress-free!)
  5. Roll & Cut: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. On a lightly floured surface, roll dough to 1/4-inch thickness and cut into your favorite festive shapes.
  6. Bake: Bake for 8 to 10 minutes, or until the edges are just set and pale. Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
  7. Glaze & Decorate: Whisk powdered sugar and champagne together until smooth. Dip or drizzle over cooled cookies, top with sparkling sugar, and let set before serving!

Does the alcohol stay in the cookies when baked?

Most of the alcohol content cooks off during the baking process, leaving behind a subtle, sweet champagne flavor note. However, if you prefer an alcohol-free alternative, sparkling white grape juice or ginger ale makes a wonderful 1:1 substitute!
