This recipe uses a handful of basic pantry and dairy staples to build a rich, velvety cheesecake with a sturdy crust:

For the Graham Cracker Crust:

  • 10 Graham Crackers: Finely ground into crumbs.
  • 3–4 Tablespoons Unsalted Butter: Melted to bind the crust.
  • 1/4 Cup All-Purpose Flour: Gives the crust a great structure.
  • 2 Teaspoons Brown Sugar: Adds a subtle caramel sweetness.
  • Pinch of Sea Salt: Balances out the crust’s sweetness.

For the Cheesecake Filling:

  • 16 oz (2 Blocks) Cream Cheese: Room temperature for a completely smooth batter.
  • 2 Large Eggs: Room temperature to blend effortlessly without over-mixing.
  • 1/2 Cup Sour Cream: Room temperature for that signature New York tang.
  • 2/3 Cup Granulated Sugar: Sweetens the filling just right.
  • 1 Teaspoon Vanilla Extract: Brings a warm bakery scent.
  • 1/4 Teaspoon Salt: Highlights the rich cream cheese flavor.
  • 2 Tablespoons All-Purpose Flour: Helps set the custard as it steams.

Let’s Get Baking

  1. Prep the Crust: Mix your finely ground graham cracker crumbs, melted butter, flour, brown sugar, and salt in a bowl until combined. Press firmly into the bottom and slightly up the sides of a 7-inch springform pan lined with parchment paper. Freeze the pan while preparing the filling.
  2. Cream the Cheese: In a large bowl, beat the room-temperature cream cheese, sugar, and salt together on low speed until smooth and creamy. (Therapy Tip: Keep the mixer speed low to avoid whipping excess air bubbles into the batter!)
  3. Add Liquids & Dry: Mix in the sour cream, vanilla extract, and flour until combined.
  4. Gently Add Eggs: Add the eggs one at a time, mixing on low speed just until incorporated.
  5. Fill & Foil: Pour the filling into the chilled crust. Cover the springform pan tightly with aluminum foil to prevent steam water from dripping onto your cheesecake.
  6. Pressure Cook: Pour 1.5 cups of water into the bottom of your Instant Pot liner and insert the trivet. Place the wrapped pan onto the trivet. Lock the lid and cook on High Pressure for 35 minutes.
  7. Natural Release & Chill: Allow the Instant Pot to naturally release pressure for 18 minutes before venting any remaining steam. Remove the cheesecake, uncover, and let it cool completely on a wire rack before refrigerating for at least 6 hours (or overnight) to set.

Room temperature cream cheese, sour cream, and eggs blend together seamlessly without lumpiness. Cold ingredients require vigorous mixing, which incorporates excess air and causes cracks while baking.
