Hey, every birdy. Today we are going to making one of my favorite soups and it is so easy to make. I did struggle with this character a lot because he says that he likes fresh fruit or soup. And when I started writing for this character I was really tempted to just put together a plate of fresh fruit and call it down there because it was summer time and we had an abundance of peaches. But then I remember that we are coming on to Soup season.  Now with most of my Cooking recipes there aren’t any real measurements.

Before we discuss the recipe. We have to introduce the character. Kaveh is an architect from Sumeru. And he is Alhathem’s roommate. He states that his favorite foods are “ My favorites are alcohol, warm soup, and anything with cream or cheese in it. Oh, and I’ll never say no to fresh fruit.” When I read that for the umpteenth time, I was like “oh wait… broccoli cheddar soup would be perfect because it is a warm soup. It can be paired with alcohol, If you so choose to. And it has cheese in it. And it’s green for Dendro.” 

And we are going to be serving this soup with some Pizza Dough Rolls. 

For this recipe you are going to need 

  • 1 bag of broccoli (fresh or frozen both work well here) 
  • Maybe some onion and garlic if you want 
  • Chicken bouillon 
  • Water 
  • Cheddar cheese

Pizza Dough Rolls 

  • 2 ½ to 3 cups Flour
  • 1 Tablespoon Sugar
  • 1 teaspoon salt
  • 1 package yeast (2 ¼ teaspoons) 
  • 3 Tablesppons olive or vegetable oil 
  • 1 cup very warm water ( 120 to 130 F)

And you are going to need some sort of blender. We have a Kitchen aid immersion blender but you can use any type that you want. 

The first thing that you want to do is start with your rolls. The reason we do this first and why we are doing Pizza dough rolls instead of regular rolls is because the proofing time is not as long as regular bread. 

In a large mixing bowl or the bowl of your mixer, you are going to mix together 1 cup of flour, the sugar, salt and yeast. 

Add 3 tablespoons of oil and the warm water. The way that I was taught how to check the temperature of the water for yeast is run the water over your hand and when it is slightly warmer than the temperature of your hand it is the right temperature. I mean I guess you could grab a kitchen thermometer if you wanted to. But the way that I was taught has never failed me, yet. 

Now you are going to beat this mixture on medium speed for about 3 minutes making sure to scrape the sides for the bowl frequently. Add enough flour until the dough is soft and leaves the side of the bowl. 

Place the dough on a floured surface and knead the dough for about 5 to 8 minutes or until the dough is smooth and springy. 

Cover with plastic wrap or my go to a kitchen cloth that is designated for breads. And let it rest for 30 minutes. 

Preheat your oven to 350 F. 

While that is resting you can start on your soup. 

The first thing you are going to want to do is add your water and broccoli to the pot. I cannot really tell you how much to make. Because I am usually feeding seven adults. So we always make a bunch of soup for dinner and then have leftovers for lunches. I am going to give you the basics of this recipe. But I just don’t think that I can really give you the exact measurements. Just know that every family and person is different. So plan accordingly. 

We have also used both frozen broccoli and fresh broccoli for this recipe and let me tell you a secret. There is no taste difference between the two.

You are going to want to fill your pot with water. Add the broccoli and the chicken bouillon. Let the boil. The thickness is determined on how creamy or how thick you want your soup to be. 

Once it starts to boil, you are going to reduce the temperature and start forming your rolls. To do this take your plastic wrap/cloth off and section off enough rolls so everyone can have at least two. Know we have gone many different ways with these rolls. We have adding pretzel salts to the top. We have added everything bagel seasoning to the tops. It just depends on what type of rolls you are wanting. But for me I generally don’t like pretzel salts because it just tastes to strong of salt. 

Bake them in the oven for about 15 to 20 minutes. 

While your rolls are baking your soup should be cooking. You don’t want to serve raw broccoli soup. Because that would not be a pleasant thing to eat. 

Once you have the right consistency you are going to grab your immersion blender and give it a good blending. You could also do this in a fancy blender if you have them. But I suggest getting yourself a Immersion blender because they are so helpful. Especially with making things like creamy soups. 

Now that you are your broccoli soup smoothed. You are going to add the cheddar to the soup. There is no right or wrong amount of cheddar cheese. But you don’t want to over power the broccoli with cheese. So just figure it out and it will be okay. 

Your rolls are out of the oven. Be careful because they will be very warm. And your soup is ready to eat. 

Congratulations you made a very healthy cheap and comforting meal, that will last you a while. (don’t mind me. I wrote this in 2024, when cheese was not as expensive as it is now.)

Broccoli Cheddar Soup

This is such a comforting meal when you are in the middle of January or February. When it's Just so cold.

Ingredients
  

  • 1 bag of broccoli fresh or frozen both work well here
  • Maybe some onion and garlic if you want
  • Chicken bouillon
  • Water
  • Cheddar cheese

Method
 

  1. Grab the biggest soup pot you have.
  2. There are usually two button-looking nombs on the inside of the pot where the handles are. Fill your pot with that much water.
  3. Add your broccoli and chicken bouillon. Let it boil.
  4. Once it boils, use your immersion blender and blend it to your desired texture.
  5. Right before serving, add in your cheddar cheese.

Pizza Dough Rolls

These are the perfect things to make for any time. You can simply add a little bit more sugar to have it be a simple cinnamon roll, or you can add garlic. Making an amazing garlic bread.

Ingredients
  

  • 2 ½ to 3 cups Flour
  • 1 Tablespoon Sugar
  • 1 teaspoon salt
  • 1 package yeast 2 ¼ teaspoons
  • 3 Tablespoons olive or vegetable oil
  • 1 cup very warm water 120 to 130°F

Method
 

  1. Preheat your oven to 425°F.
  2. In a large mixing bowl, mix 1 cup of flour, the sugar, salt, and yeast.
  3. Add 3 tablespoons of oil and the warm water.
  4. Mix your dough on medium speed, if using a mixer, for about 3 minutes.
  5. Add enough flour until the dough is soft and it leaves the side of the bowl.
  6. Knead the dough for about 5 to 8 minutes, or let it continue to be in your mixer on the same speed for that same amount of time. You want the dough to be smooth and springy.
  7. Cover it with plastic wrap or a kitchen cloth and let it sit for 30 minutes.
  8. To form rolls:
  9. The use of a kitchen scale is perfect here.
  10. That way, each roll is the same amount each time.
  11. And that all depends on how big or small you want each roll to be.
  12. Bake for 15 to 20 minutes.
