
Hello, every birdy. Today we are going to be making some really easy and delicious cookies. They are Sand Dollar Cookies. With all the almonds that we have in my house it seems like the best thing to do.

Again, I understand that not everyone can make this recipe, because almonds are expensive. But I want to share with you that if you have an abundance of something, you can always find ways to use them up. For me, my family has been given a bunch of almonds, and we are trying to use them as much as we can. And we have given a few to our local food pantries.

For those of you that play Genshin, the character that inspired this recipe is obvious, Dori. She is merchant from Sumeru who loves mora, the money system in Genshin. Even before I had almonds in the house I knew that this was going to be her recipe. Because even the recipe that she says she likes in game is called “Mora Meat.” Meaning she really doesn’t care about anything other than Mora.

This recipe is perfect for right now, because they don’t nesserially need any almonds and they most defientlely do not need the thing that is worth its weight in gold right now: EGGS!

The first thing that you want to do is preheat your oven to 400F. Grease your baking sheet with either parchment paper or non-stick spray.

The recipe and the measurements will be in the description down below.

You will need:
- Butter/marergine
- Powdered sugar
- Vanilla
- Salt
- Flour + Almond Flour
- Brown sugar

With your electric mixer, you will mix your butter and powdered sugar. This will take about 2 minutes. Making sure to scrape down the sides of the bowl, so that everything is mixed together well.

Now you are going to add in the vanilla and salt. Mix until smooth

Mix until everything is combined.

With a cookie scoop, or 2 spoons. You will want each cookie to be 1 Tbsp in size.

Press it into the brown sugar. At this point, I did not have brown sugar, so I added something somewhat similar. White sugar and some of the almond flour that I made a few days prior.

Bake for 8-9 minutes or until set. You don’t want these cookies to brown, because then you will be trying to eat a hockey puck. Yummy!


My family devoured these cookies. Whenever I make cookies I always make cookies divisible by 7 because I don’t want a fight breaking out because someone got more cookies than another. Yes, we are all adults here, but when it comes to sweets We are all children at heart.
