Albedo: Vanilla Nectarine Pie

Hello, every birdy. Today we are going to be making a recipe that was really good. This recipe was easy to put together. The character that inspired this one is Albedo.

Albedo (Al-bay-do) is the head alchemist in Mondstadt. He says that his favorite food is any type of dessert. So I thought that this recipe was perfect for him. And also I had nectarines in the fridge that I didn’t want to throw them away.  And so, I made this pie.

Both the pie crust recipe and the pie itself come from Betty Crocker. If you want to make it your self feel free to check it out. The recipe will be down in the description.

First, we are going to be making the pie crust. And if you don’t want to make the pie crust or you simply don’t have the time, then it is completely acceptable. Feel free to skip a few paragraphs. That is fine.

For the pie crust you are going to need:

  • Flour
  • Salt
  • Shortening 
  • Ice cold water

In a bowl you are going to add your flour and salt. Cut in your shortening with either a pastry blender or two forks. You want this mixture to be the size of small peas. Sprinkle the ice water 1 Tablespoon at a time, tossing with a fork or with a clean hand. Added 1 or 2 more tablespoons of water if needed. You want to be able to gather the pastry into a ball. Shape it into a flattened round, wrap it in plastic wrap and place it in the freezer until you are done with the filling for the pie.

Now that we have the pie crust ready. We are going to start making the pie filling.

Start by preheating your oven to 375F. I personally find it helpful to grease a 9-inch pie pan.

For the filling you are going to need:

  • Nectarines
  • Granulated sugar
  • Cornstarch
  • Vanilla 
  • Orange juice
  • AP Flour
  • Brown Sugar
  • Grated Orange Peel
  • Salt
  • Cold Butter

In a medium-sized bowl, you are going to mix together your nectarines, granulated sugar, cornstarch, vanilla, and orange juice. You want to let this mixture set for at least 5 to 10 minutes, enough time to roll out your pie crust.

In another medium-sized bowl, you are going to start on your crumble top. In this bowl, you are going to place your flour, brown sugar, orange peel, and salt. Cut in the cold butter using a pastry blender. You want this mixture to look like coarse crumbs. Sprinkle this mixture over the nectarines.

Bake the pie for 30 minutes. If you want to, you can cover the crust with strips of foil to prevent excessive browning. And you want to bake for 10 minutes longer or until it is golden brown.

You want to cool this pie for at least 30 minutes before serving.

This pie was very good. When I was describing this recipe to my dad, I told him the recipe “Vanilla Nectarine Pie” and told him that it had 1 tablespoon of vanilla in it, he said that was a lot.

When we were eating it, when he was done he asked me again how much vanilla it had it in and I answered 1 Tablespoon and then he just looked confused. Took a minute to respond and then said “OH… that’s good! I thought you said 5 tablespoons of vanilla.” I just started laughing at that. So yeah, even though this pie is called a Vanilla Nectarine Pie, you can still taste the nectarines.

I liked this recipe. It was very simple and I was honestly really glad that I had oranges on the table. It just added something extra to it.
