Hey everybirdy! Robby here, and welcome to Day 3 of Winterfest Baking. Today, we are whipping up something truly comforting: Cinnamon Cream Cheese Cookies. These are ooey, gooey, and melt-in-your-mouth soft—the ultimate treat for a chilly winter day.
Because the dough needs time to chill, I recommend starting this recipe earlier in the day so it’s ready exactly when your cookie craving hits!
Why This is the Ultimate Winterfest Treat
These aren’t your average crunchy holiday cookies. The addition of cream cheese creates a velvety, pillowy texture that stays soft for days. They are rolled in a warm cinnamon-sugar crust, making your entire house smell exactly like a cozy winter morning.

The Essentials
- 4 oz cream cheese: Softened to room temperature so it blends flawlessly into a smooth dough.
- ½ cup of butter or margarine, also softened. (Margarine is actually a great budget-friendly secret weapon for keeping holiday bakes extra soft!)
- 1 ½ cups powdered sugar: This is the ultimate secret to getting that fine, melt-away bakery texture.
- 1 egg (room temperature): For that essential richness and structure.
- 1 tsp vanilla extract: For that classic, comforting bakery aroma.
- ½ tsp baking powder & a pinch of salt: Just enough to give our Winterfest dough a gentle lift and balance out the sweetness.
- 1 ¾ cups All-Purpose Flour: The reliable base of our dough. I always recommend King Arthur All-Purpose Flour because its consistent protein count gives baked goods a structure you can trust not to let you down.
For the Cozy Coating:
- ½ cup granulated sugar & 1 tbsp ground cinnamon



Let’s Get Baking
- Prep and Preheat: Start by preheating your oven to 375°F (190°C). Line your baking sheets with parchment paper—this is an absolute must for keeping these delicate cookies from sticking!
- Cream the Base: In a large bowl or stand mixer, gently cream your margarine (or butter) and cream cheese together. Keep a steady, rhythmic pace until the mixture is beautifully smooth, uniform, and light.
- Mix the Wet Ingredients: Slowly add your powdered sugar and beat carefully until the mixture becomes wonderfully silky. Next, blend in your egg, vanilla extract, baking powder, and salt until everything is fully combined and fluffy.
- Gradually Add the Flour: Gradually add your all-purpose flour to the wet base, watching with a satisfying calm as the dry pockets fade away and a soft, fragrant dough completely forms. Mix until just combined to keep the cookies as tender as possible.
- The “Chill Out” Phase: Gather your dough, wrap it gently in plastic wrap, and pop it in the fridge to chill for at least one hour. Think of it as a mandatory nap for your dough—this prevents it from sticking to your hands and keeps the cookies from spreading too thin!
- Your Chill Time is Important, Too: While the dough sets, step away from the kitchen to completely decompress. You can use this hour to tackle the “Pre-Clean” ritual by washing the dirty dishes you’ve already used (future you will thank you!), putting on a playlist and moving your body, or simply curling up and getting lost in a good book.
- The Cinnamon-Sugar Roll: In a small bowl, mindfully mix your granulated sugar and cinnamon. Scoop the chilled dough using a tablespoon or a small cookie scoop, and roll it into a neat, smooth ball between your palms. Robby’s Pro Tip: The real secret to the perfect crust is to roll the dough balls twice—once for a base layer and a second time right before they hit the baking sheet!
- Bake to Perfection: Arrange the coated dough balls about two inches apart on your prepared baking sheets so they have room to breathe. Bake for 8 to 10 minutes. Therapy Tip: It can be incredibly hard to tell when these are done because they do not get golden brown! Look for them to be puffed and set on top, but still pale. If you wait for them to brown, they will overbake and lose that signature ooey-gooey texture.
- Let Them Rest: Let the cookies rest right on the warm baking sheet for 10 minutes so the gooey centers can firm up just enough to handle. Transfer them over to a wire rack to finish cooling completely, taking a deep breath to enjoy the cozy aroma filling your home.

Why don’t my Cinnamon Cream Cheese Cookies brown?
Don’t panic if they stay pale! Unlike a standard chocolate chip cookie, these are meant to look light. Because we use powdered sugar and cream cheese, they remain incredibly soft, delicate, and pillowy. Trust your kitchen timer on this one, not the color!
What is the best way to store these to keep them fresh?
To keep that fresh-baked therapy lasting all week, just tuck them into an airtight container at room temperature for up to 5 days. If you want to save some for later in the Winterfest season, they actually freeze beautifully! Just let them thaw on the counter at room temperature for about an hour before diving in.

- Bake & Breathe: Arrange the coated dough balls about 2 inches apart on your baking sheet so they have plenty of room to breathe. Bake for 8 to 10 minutes—the centers will still look very soft and won’t get golden brown, but watch with joy as they puff up beautifully right when they are done.
- Rest & Reward: Let the cookies cool right on the warm baking sheet for 10 minutes so they set perfectly. Transfer them over to a wire rack to finish cooling completely, taking a deep breath to enjoy the cozy aroma filling your home.
