
Hello, every birdie. Today we are going to be making a pie that I honestly never thought that I would be making in February. This is usually a pie that would be made in about March or April, or in the summer months. A peach pie.

Now, we want to talk about the character that inspired this recipe, Xinyan. She is a rock and roll musician. She lives in Liyue. She is a person who goes against the common music taste of her country. And she is amazing. And I thought that a peach pie would be perfect for her.

The recipe and measurements will be in the description down below.

The first thing you want to do is make your pie crust. I understand that pie crust making is not for everyone, and if you want you can skip to the next part.

For the pie crust, you are going to need:
- Flour
- Shortening
- salt
- Ice water

In a small bowl, you are going to add your flour and salt. Mix in your shortening with a pastry blender or two forks. Making sure that the mixture is coarse and looks similar to small peas. Slowly add in your ice water 1 tablespoon at a time. Once all the flour is combined pour it onto a floured surface and form it into a small disc. Place it in the freezer until you are done with the filling.

Now onto the pie filling.

You are going to need:
- Sugar
- Flour
- Peaches
- Lemon juice
- Cinnamon

The first thing you are going to do is preheat your oven to 400F. Make sure you place a cookie sheet in the oven before you place the pie pan. You will definitely need it, otherwise, it will be a mess.

In a large bowl, you are going to mix the sugar, flour, and cinnamon.

Now you are going to stir the peaches and lemon juice.

Once you have the filling together. You are going to roll your pie crust out, and then carefully add in the filling. Add the top crust and vent it the way that you desire. Because it was close to Valentine’s Day, I made this pie special. I cut out hearts with a cookie cutter and it came out really cute.


Again place your pie pan on the cookie sheet and bake for about 45 minutes or until the crust is golden brown and the juice in the pie is thick and bubbly.

This was such a simple recipe, and it was so good. When the thing that I forgot about and it didn’t really matter that much, is I didn’t add the cinnamon. I realized this after I put the pie in the oven. After the top crust was on. And honestly, I really liked it.
