Hello, everyone. I have one thing that I want to explain to you, I am not ashamed of it, because it is just something that I do naturally. My community has a mobile food pantry at least every month. And my family goes and gets food.

That is not the only way we get food, but it really does help the budget. So there will be times on this blog where I may be using what seems like expensive ingredients. But usually, they are things that we have been giving for free at the food truck. 

A few trucks ago we were able to get SO many bags of Key Limes. This was shocking for me because being in New York, and watching what we buy so intently, the only lime I have ever eaten or seen were the limes that were the size of lemons.

So today, in order to use a bunch of them, I thought it would be perfect to make up some Lime Curd. I recently posted up a question on a Facebook group that I am on and asked them what I should do with a bunch of Key lime. Some people were telling me to make a key lime pie (meringue and not), cheesecakes, and curd was one of the top recipes.

One thing that I have learned over the past few years is that it is easier if you have all of your ingredients in front of you, in order of when you are going to use them, Yes, it will mean that you wash more dishes, but it is a lot easier, and you don’t break your concentration.

For this recipe you are going to need:

  • 3 large eggs
  • ¾ cup of granulated sugar 
  • A pinch of salt (this will change person to person)
  • ½ cup of fresh lime juice or bottled key lime juice 
  • Zest of 1 large or two small limes or key limes 
  • 4 tablespoons of unsalted butter (if you use salted butter just reduce the amount salt you add.)

The first thing that you want to do is grab a medium saucepan. Before placing on the heat you are going to combine your eggs, sugar, salt juice, and zest.

Once it is combined you are going to place the saucepan on low heat. Stirring constantly with a wooden spoon until the mixture thickens. This will take about 4-5 minutes. Turn all the way to low and add the butter. Make sure to stir it until it is smooth. 

Remove it from the heat and pour it into the jar(s). This recipe makes about 2 cups. Trust me when I saw the amount will be fine. Your arms will thank you later, for only doing one batch of this really good recipe.
