Black Bean Cupcakes

Sul Sul, Gerbits. Today we are going to be making some really healthy, really tasty cupcakes. 

We also have two guests with us. Both are writers for the local Evergreen Harbor Times. They wanted to do an interview with me, and asked if they could watch me record a video. 

For some reason I don’t like making cupcakes. It’s not that I don’t like making them, its just that I have a hard time determining whether something is a cupcake or a muffin.

But today we are going to be making some black bean cupcakes.

The recipe will be down in the description below.

First things first, you are going to preheat your oven to 350.

Line a cupcake pan with paper liners.

Mix your butter, sugar, and eggs for 3 minutes on high until thick and creamy.

Fold in your vanilla extract into the pureed beans. In a small bowl you are going to whisk together the cocoa powder, flour and baking powder.

Add the egg mixture into the beans, then fold the flour mixture into beans a little at a time. Add the chocolate chips, and stir well.

Fill cupcake liners about 2/3 full. Bake for about 20 minutes or until a toothpick inserted comes out clean. Cool in pan for 10 minutes, then remove to wire rack to cool completely.

Dori: um… I guess not. (That was really weird. Why do so many people have violins in their pockets. If it’s not a violin, it’s a lump of clay. And god for bid a future cube.)

While they cool you can start making the frosting. We are going to be making a cream cheese frosting.

Beat the cream cheese and butter at medium speed until creamy.

Gradually add powdered sugar and salt, beating until blended.

Stir in the vanilla.

Top each of the cupcakes with a swirl of frosting.
