French Toast Blintz

Sul Sul, gerbits. Today we are going to be making a very different recipe. I combined two different recipes to get this recipe. I made this recipe for my mom, on Mother’s Day. Yes, I went over to her house, and I made this recipe for her. Because she is my mom and I wanted to celebrate it with her. We’re gonna be making French Toast Blintz.

The first thing you are going to want to do is preheat your oven to the lowest it will go. My oven goes to 125℉. You want to have your oven on, that way your breakfast does not get cold. 

Next you are going to be making the filling for the blintz. 

For those of you who do not know, a blintz is basically a crepe, but instead of fruit inside, it has ricotta cheese. For many years, we have had blintz at Easter brunch. But we haven’t been able to have it for the last couple of years. 

To make the filling you are going to mix together the ricotta cheese, melted butter, 1 egg yolk, vanilla and sugar. And mix it together until it is well incorporated. 

Now you are going to turn your griddle on, or your skillet, to a medium heat.

You are going to mix together your French toast mixture. 

For every person that you are making breakfast for you will add 2 eggs to the mix. So if you want to make enough for seven people to have at least two pieces of French toast, then you will need 14 eggs. 

You will need milk, vanilla, cinnamon and nutmeg. There are no real measurements for this recipe. You just have to eyeball it. 

Once you flip the French toast over, you are going to add 1-2 tablespoons of the blintz mixture to every other one. Because, you are going to place the other one on top, making it a sandwich. 

On a baking sheet, you are going to place the sandwich in the oven. Just to keep it warm.

Once you are done with all of the sandwiches. You can begin serving. Top it with berries and powdered sugar.
