Apple Butter Roll Cake

Sul Sul, Gerbits! Today we are making yet another apple cake. But today it is a little bit different, it is going to be an apple butter roll cake. 

Roll cakes are extremely easy to make, but they are so intimidating. It is literally a recipe where you have to scream confidence at yourself. Because the moment you loose confidence is the moment that this cake is not going to work. 

The recipe will be in the description down below. 

You are going to preheat your oven to 375.

You will need to separate 3 eggs, and let the egg whites stand at room temperature for 30 minutes. 

Line a baking pan that is 15x10x1-inch with parchment paper and spray the paper with non-stick spray. Then you are going to sprinkle the paper with 1 tablespoon of flour and 2 tablespoons of sugar, and set it aside until you need it.

In a large bowl, you are going to combine your remaining flour and sugar. You will gradually add cinnamon, baking soda, ginger, spices, and baking powder. 

We are going to combine the butter, molasses, egg yolk, and water in another bowl. 

Add the dry ingredients and beat until blended. 

Beat the egg whites on medium speed until soft peaks form; fold into batter. 

Pour into the prepared pan. 

Bake for 12-14 minutes or until cake springs back when lightly touched. 

Cool for about 5 minutes. 

At this point you have to be confident in yourself! 

You are going to turn the cake onto a kitchen towel that is dusted with confectioners’ sugar. 

Gently peel off the parchment paper. 

Now you are going to roll up the cake in a towel, as if you are going to make a jelly roll. Starting from the short side. 

Cool completely on a wire rack.

Once the cake is completely cool, you are going to unroll the cake. 

Spread the apple butter to about ½ inch all the sides. 

Roll it up again. Don’t worry, this will be messy. 

Cover it with plastic wrap and chill for at least an hour before serving.
