
Sul Sul, Gerbits. Today we are going to be making yet another recipe with a vegetable that I had not eaten before this year. That is the Yellow Squash or summer squash.

We will be baking some summer squash banana cookies. The recipe and the measurements will be down in the description down below.

First things first, preheat your oven to 350.

You are going to combine your dry ingredients in a medium bowl. Dry ingredients included: flour, oat, baking soda, and cinnamon.

In another bowl, you will combine your butter and sugar until it is a creamy texture.

To the butter mixture, you are going to add the banana, squash, and egg. And mix until combined.

Slowly add the dry ingredients to the butter mixture. And stir until just incorporated.

With a cookie scoop or spoon, drop the cookie dough onto your cookie sheet.

The recipe says to bake them for 12-15 minutes or until the cookies are just set.

However, as many of you know or for those of you who are new, whenever I am doing a cookie recipe I only bake the cookie for 8 minutes, because for some reason that is the magic number my oven likes. When it comes to making cookies.

Even with saying this though. Some of my family members said that it would have been a little bit better if the cookies were a little crunchy. Because the cookies that we had were very chewy.

These were not my favorite cookies, they were just kind of bland in flavor and texture. It wasn’t like there wasn’t any flavor, but it just felt neutral.
