Also some of you older viewers may recognize the kitchen that I am in today. Yes, I am in the one and only mom, Briella Ponder’s kitchen. The kitchen I grew up in.

Today we are going to be making a very unique pie. Yes, that’s right I said pie. I was craving pie today. And it doesn’t always need to be autumn to make pies.

We are going to be making a Yellow Squash pie. It’s another hidden healthy vegetable. Don’t understand why I have been making vegetables into sweets. The recipe will be down in the description.

Preheat your oven to 350 degrees.

The first thing that you need to do is work on your pie crust. If you prefer store-bought pie crust then use that. I just personally prefer homemade crust, the simple Betty Crocker recipe that my mom taught me when I was growing up.

In a mixing bowl, mix your flour and salt.

Cut the shortening with a pastry blender or a fork, until the mixture looks like small peas.

Sprinkle it with ice water about 1 tablespoon at a time. Tossing it with the pastry blender or the fork. Eventually, you will have to use your hands.

Gather the pie crust into a ball and form a disc shape. Wrap it with plastic wrap, and put it in the freezer, and take it out when you are ready to use it.

The first thing you are going to do is grate your yellow squash. You can use a handheld grater or a food processor. Either one works for shredding vegetables.

Mix all the ingredients, which include your squash, sugar, eggs, flour, vanilla.

When you have this mixture made, you are going to roll out your pie crust, to the size of your pie pan.

After it is rolled out you are going to pour the mixture into the pie crust and sprinkle the coconut over the top.

Bake for about 35 minutes or until the top is brown.

This pie is amazing! Oh my gosh. When I made it I was so worried that this was not going to turn out well. But my gosh, it was a success. I love it when experiments turn out well. It makes me feel proud as a baker.
