
Sul Sul, Gerbits. Today we are doing a recipe that is just so close to my heart. It is a simple muffin recipe that my mom shared with me when I was younger. It is another recipe that comes from Betty Crocker.

First things first, preheat your oven to 400 degrees Fahrenheit.

Grease the bottom only of about 12 medium muffin cups. *haha* Let me just tell you that if you have a big family as I do, 12 muffins is not going to be enough.

Just imagine 1 muffin per person, *haha*. My gosh, that would never work. I usually triple this recipe. However, not all people need to triple the recipe.

So I will just go based on the recipe itself. And you can determine if you need more muffins or not.

The recipe, along with the measurements will be in the description down below.

Beat the egg; stir in the milk, raisins, and oil.

Stir in the remaining ingredients: all-purpose flour, oatmeal, carrots, sugar, cinnamon, baking powder, and salt, all at once just until the flour is moistened.

At this point, the batter will be lumpy.

You are going to fill the muffin cups about ¾ cup full.

Baking them until they are golden brown or about 20 minutes.

Immediately remove from the pan, and watch as your family devours them. All of my muffins except for these. The family did not care much for these muffins. They were in the fridge for a while before they were gone. I am not mad though because they are happy with me experimenting. And playing with different flavors.
