Classic Homestyle Carrot Cake with Cream Cheese Frosting

Hey everybirdy! If you’ve been following my baking journey, you already know that Robby’s Baking Therapy is all about finding a little peace of mind in the kitchen without breaking the bank. I’m a firm believer that you don’t need an expensive grocery haul to create 5-star treats, and this classic homestyle carrot cake is the absolute definition of that.

Baking a birthday cake for a kid who specifically requests a vegetable dessert is a true rite of passage. When Daxon asked for carrot cake for his birthday, I happily agreed because it is one of those timeless classics that never gets old. This recipe comes straight from an all-time favorite Betty Crocker Cookbook to show how simple shredded veggies and a rich cream cheese frosting turn into an absolute showstopper.

Why This Carrot Cake Is Total Therapy

First things first: we are leaning into simple ingredients that keep things wallet-friendly while building an incredible, moist crumb.

Then comes the best part: grating the fresh carrots and getting everything mixed. If you’ve had a stressful week, taking the time to measure out the warm spices and watch pantry staples transform into a golden batter is where the baking therapy really kicks in! Don’t rush the process; letting yourself slow down in the kitchen is what this is all about.

Ingredients

  • 2 cups All-Purpose Flour
  • 2 cups Granulated Sugar
  • 2 tsp Baking Soda
  • 1.5 tsp Ground Cinnamon
  • 1 tsp Salt
  • 1 cup Vegetable Oil
  • 3 large Eggs
  • 2 tsp Vanilla Extract
  • 2 cups Grated Carrots
  • 1 can (8 oz) Crushed Pineapple, drained
  • 0.5 cup Flaked Coconut (optional)

For the Cream Cheese Frosting:

  • 1 pkg (8 oz) Cream cheese, softened
  • 0.25 cup Butter, softened
  • 2 tsp Vanilla Extract
  • 1 tbsp Milk (plus more as needed)
  • 4 cups Powdered Sugar

Let’s Get Baking

  1. Prep Your Space: Preheat your oven to 350°F. Grease and lightly flour two 8 or 9-inch round cake pans (skipping parchment paper because it and I simply do not get along!).
  2. Mix the Wet Base: In a large bowl, beat the sugar, vegetable oil, and eggs together with an electric mixer on low speed for about 30 seconds until fully blended.
  3. Mix the Dry Ingredients: In a separate smaller bowl, whisk together your flour, cinnamon, baking soda, salt, and vanilla. Slow and steady wins the race here—gradually add the dry mixture to your wet ingredients on medium speed for about 1 minute. Keeping it to one minute leaves room to incorporate the heavy add-ins without overbeating.
  4. Fold in the Add-ins: Gently stir in those grated carrots, drained crushed pineapple, and coconut until the thick batter is evenly mixed.
  5. Bake to Perfection: Divide the batter evenly between your prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely before frosting.
  6. Make the Frosting: In a separate large bowl, beat the softened cream cheese, butter, milk, and vanilla on low speed until smooth. Gradually add the powdered sugar at a low speed until the frosting is rich, smooth, and easily spreadable.
  7. Assemble and Serve: Spread a generous layer of frosting between the cooled layers and all over the outside, take a deep breath, and slice into a piece of pure comfort.

Questions & Answers

  • Why does the recipe only call for beating the dry ingredients for one minute? Other recipes might ask for two minutes, but since you fold in heavy ingredients like carrots and pineapple right and left, keeping the initial mix to one minute helps prevent a dense crumb and gets you to the right texture organically.
  • Can I leave out the coconut or pineapple? Absolutely! The original Betty Crocker recipe is wonderfully forgiving. If you prefer a simpler spiced carrot cake, you can easily omit them and still get an incredible, moist texture.
