Hey, everybirdy! Today is a bit bittersweet. This is the last post in my current baking series, and I really wanted to go all out with something fancy. However, since flour is still so hard to find lately, we are going back to basics with one more boxed cake.But, to make it special, I’m going to show you how to make a Simple Homemade Frosting from scratch! It’s the perfect way to elevate a box mix and make it feel like a truly special occasion.

💡 Robby’s Quick Tips

DIY Powdered Sugar:

If you’re short on powdered sugar, don’t panic! You can make it yourself by blending 3 cups of regular white sugar with 1 tablespoon of cornstarch for 1–2 minutes. Just be careful when you open the lid, that “sugar dust” gets everywhere!

The 2-Minute Rule:

Even on our last cake, don’t forget the timer! 30 seconds on low, then 2 minutes on medium. It makes all the difference for a balanced, fluffy cake.

Preventing the Stick:

A little non-stick spray and a light dusting of flour on the bottom of the pan is your best friend. It ensures your hard work doesn’t stay stuck in the pan!

Cooling is Crucial:

Wait until that cake is stone-cold before you even look at the frosting. Putting frosting on a warm cake is a recipe for a melted mess.

🛒 The Essentials (What You’ll Need)

  • 1 Box Cake Mix (Any flavor!)
  • Eggs, Water, and Oil (As called for on your specific box)
  • 3 Cups Powdered Sugar (Store-bought or DIY)
  • Butter or Margarine (Softened)
  • Vanilla ExtractMilk (A splash at a time)

👩‍🍳 How to Make It

  1. Frosting First: In abowl, cream together your butter and powdered sugar. Once it’s creamy, add your vanilla and a little milk. If it’s too thick, add a tiny bit more milk until it’s perfectly spreadable. Keep it in the fridge until the cake is ready.
  2. Prep: Preheat your oven to 350°F. Spray your pan (I used a 9×13) and lightly flour the bottom.
  3. Mix: Combine your cake mix, water, oil, and eggs. Mix on low for 30 seconds, then on medium speed for exactly 2 minutes.
  4. Bake: Pour into the pan and bake immediately for 26–31 minutes (or according to your box’s directions). Use a wooden toothpick to check for doneness.
  5. Cool & Frost: Let the cake cool completely. Every baker has their own style—I just smooth it all over the top. It might look simple, but it tastes incredible!

Robby: Absolutely! This recipe is great for cupcakes too. If you want to pipe it, just add a little more powdered sugar to make it stiffer.

This frosting is the perfect way to make a basic box mix feel special.

Ingredients
