Hey, everybirdy! If you’ve been following me for a while, you know exactly how obsessed I am with these cookies. They became famous all over the internet as “quarantine cookies” because they are so incredibly simple. Most of the time, you already have every single ingredient sitting in your pantry!
Note: For my birdy friends with nut allergies, I am so sorry you have to sit this one out—but stay tuned, because I have some allergy-friendly cookie recipes coming your way very soon!

📋 Baking Therapy: The Power of Three
Sometimes we overcomplicate our lives and our baking. There is something deeply therapeutic about realizing you don’t need a massive grocery haul to create something delicious. With just three basic ingredients, you can transform a stressful afternoon into a house that smells like warm peanut butter and sugar. It’s a reminder that even when things feel limited, we can still make something wonderful.
💡 Robby’s Quick Tips
- The Fork Crosshatch: This isn’t just for looks! These cookies don’t spread much on their own, so if you don’t press them down with a fork, they will stay in a ball shape. The crosshatch pattern helps them bake evenly.
- Peanut Butter Choice: You can use creamy or crunchy! Just keep in mind that “natural” peanut butters (the kind you have to stir) can sometimes make the cookies a bit oilier.
- Don’t Overbake: Eight minutes is the sweet spot. They might look a little soft when they first come out, but they will firm up as they cool on the pan.

👩🍳 How to Make It
- Preheat: Get your oven set to 350°F.
- Mix: In a medium bowl, combine the peanut butter, sugar, and egg. Stir until the mixture is smooth and well-incorporated.
- Scoop: Roll the dough into tablespoon-sized balls and place them on a cookie sheet.
- Press: Use a fork to press a crosshatch pattern into the top of each ball, flattening the cookie slightly.
- Bake: Bake for about 8 minutes, or until the edges are just starting to look golden brown.
- Cool: Let them cool completely before moving them—they are very tender when warm!

💬 Q&R: Questions & Robby

Q: Can I use a sugar substitute?
Robby: You can! Just make sure it’s a 1:1 baking replacement. The sugar provides the structure for these cookies, so it’s an important part of the “science.”
Q: Why did my cookies crumble?
Robby: This usually happens if they are overbaked or if the egg was too small. Make sure to use a Large egg to keep everything held together!
