I’ll be honest—cakes used to scare me! There is often so much pressure to make them look perfect. However, baking therapy is about the process, not just the result. The Freezer Trick:

Once your cakes have cooled for about 15 minutes, wrap them in plastic and place them in the freezer for 1 to 2 hours. Cold cake is much firmer and easier to frost, preventing crumbs from getting mixed into your icing!

Miniature Chips Matter:

Using miniature semisweet chocolate chips ensures they stay suspended in the batter rather than sinking to the bottom of the pan. If you only have regular chips, give them a quick chop first!

  • 1/2 cup Miniature Semisweet Chocolate Chips
  • 1 1/2 tsp Vanilla

For the Chocolate Frosting:

  • 1/3 cup Butter or Margarine (softened)
  • 2 oz Unsweetened Chocolate (melted and cooled)
  • 2 cups Powdered Sugar
  • Vanilla & Milk (for consistency)

1. Prep:

Heat oven to 350°F. Grease and flour two 8 or 9-inch round pans.

2. Mix:

Combine all cake ingredients in a large bowl. Beat on low for 30 seconds, then on high for 3 minutes, scraping the bowl occasionally.

3. Bake:

Pour batter into pans and bake for 40–45 minutes. A toothpick should come out clean.

4. Cool & Chill:

Let cakes cool in the pans for 5 minutes, then move to a wire rack. For easiest frosting, wrap and freeze for 1–2 hours.

5. Frost:

Mix the butter and melted chocolate. Stir in powdered sugar, then beat in vanilla and milk until smooth. Frost your layers once they are chilled!

Ingredients

  • 2 cups all purpose flour
  • 1 cup packed brown sugar
  • ½ cups granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup shortening
  • 1 ¼ cups milk
  • 3 eggs
  • ½ cup semisweet chocolate chips finely chopped or ½ cup miniature semisweet chocolate chips
  • 1 ½ teaspoons vanilla

Directions

  • Heat oven to 350°F. Grease and flour oblong pan 9 X 13, or 2 round layer pans, 8 or 9 X 1 ½ inches.
  • Beat all ingredients in large mixer bowl on low speed, scraping bowl constantly, 30 seconds; beat on high speed, scraping bowl occasionally, 3 minutes.
  • Pour into pan(s)
  • Bake until wooden pick inserted in center comes out clean, 40 to 45 minutes; cool.

  • About 2 tablespoons milk

Directions

  • Mix margarine and chocolate.
  • Stir in powdered sugar.
  • Beat in vanilla and milk until the frosting is of spreading consistency.
  • Fills and frosts two 8 – 9 inch layers or frosts a 9 X 13-inch cake.
