Stretching the Dough: 4 Dozen Egg-Free Strawberry Muffins 🍓✨

Welcome back to my stretching the dough series. This series is all about finding creative, budget-friendly ways to feed a crowd. Today’s bake was a true “pantry challenge.” I had seven adults to feed and zero eggs in the fridge.


Instead of a stressful trip to the store, I looked at what I had from my local food bank and community distribution: a case of Summer Berry yogurt, a bag of frozen strawberries, flour, and oil. I decided to see how far I could stretch these gifts. The result? Four dozen (48!) of the most moist, jammy strawberry muffins I’ve ever made.

Baking therapy is about more than just a perfect result; it’s about the peace that comes from problem-solving. When you realize a “key” ingredient like eggs is missing, it’s easy to feel anxious. However, pivoting to use what you have—such as using yogurt as a binder—is an amazing exercise in resilience. Seeing the counter filled with 48 muffins for my family turned a stressful morning into a moment of pure gratitude.

Feeding seven adults on a budget requires a little kitchen “engineering.” This recipe is the ultimate “stretch” for three reasons:

Yogurt is a powerhouse substitute. It provides the fat, moisture, and acidity needed to make muffins rise without the need for eggs or milk.

By using the flour, oil, and yogurt from the distribution, the out-of-pocket cost for this massive batch was nearly zero.

Frozen Fruit over Fresh:

The frozen strawberries from the food bank create “jammy” pockets of flavor that feel like a high-end bakery treat without the “fresh fruit” price tag.

It is amazing to see the value you can create with simple staples. If you were to buy 48 bakery-style muffins at a cafe, you would easily spend over $60.00. By using community resources and a few pantry basics like baking powder and sugar, I was able to provide that same value to my family for free.

* 6 cups All-Purpose Flour
* 1 cup Sugar
* 2 tbsp Baking Powder
* 2 tsp Baking Soda
* 1 tsp Salt
* 8 containers Backpack Yogurt (Summer Berry)
* 1 cup Oil
* ½ cup Milk or Water
* 2-3 cups Frozen Strawberries (roughly chopped)

👩‍🍳Step-by-Step Instructions

   1. Prep:

Preheat oven to 350°F. Grease or line four muffin tins.


   2. Whisk Dry:

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.

3. Mix Wet:

In a separate bowl, stir the 8 yogurts, oil, and milk/water until smooth.


   4. Combine:

Gently fold the wet into the dry. Stop just before the flour disappears to keep them light and fluffy!

   5. Add Berries:

Quickly fold in your frozen strawberries.


   6. Bake:

Scoop into tins (¾ full) and bake for 20–25 minutes. Let them cool for 10 minutes so the strawberry centers can set.
