Peanut Butter & Jelly Sandwich Cookies

Sul Sul, Gerbits. Today we are going to be making a cookie recipe that I have already made a bunch of times, but it has a different twist on it. We are going to be making my classic Peanut Butter cookies but as a sandwich.

You are going to preheat your oven to 350℉.

Line 2 baking sheets of the same size with parchment paper.

You are going to make the cookie dough first. Combine 1 cup peanut butter, 1 cup sugar and 1 egg.

If you have more ingredients, you can make as many batches as you need. These cookies never last. No matter how many batches I make.

Spread the cookie dough evenly onto the cookie sheets.

Bake for about 10 minutes.

Take them out and let them cool for a bout 5 minutes.

Carefully and confidently flip them over onto a cooling rack.

Let them cool for about 10 minutes on the cooling rack.

When they are cooled, spread some jam or jelly onto one of the layers.

Carefully place the top layer onto the jelly or jam.

Cut about 1-2 inch squares.

And enjoy.

Diondra, my sister, was the one who thought of this recipe. She knew that this was a popular cookie for me. Because it is so simple. And she said that I had a bunch of grape jelly in the pantry and in the fridge. She told me that it would be a simple thing to do.

This recipe is so simple and so good. If you want to make this recipe feel free to check out the recipe down below. Vadish, Dag Dag!
