
Sul Sul, gerbits. One of the things that I got for my birthday was a bunch of cake and brownie mixes.

So today we are going to be making a very simple cake mix cake.

I was feeling lazy today because I just felt like putting the cake in a 9 x 13 pan with no frosting.

Because sometimes you just need a basic cake.

It was a rainbow confetti cake mix.

The first thing you want to do is preheat your oven to 350℉.

Mix your eggs, milk or water, and oil for 30 seconds with your hand mixer, stand mixer, or even by hand.

Then beat the cake batter for 2 minutes.

Pour it into your prepared pan.

And bake it for about 34 minutes or whatever your box says.

I understand that I am just sharing cake and brownie mixes. But, I feel that some people may need help in understanding how to do boxed mixes. Because that is usually how everyone starts.

Reading a recipe so many times, making it, over and over again. You start to have little techniques that you pick up. That other people haven’t taught you. And that is why you have so many different ways of baking a cake.

Or really anything. If you practice something multiple times. You will eventually get better at it. You will find ways to make it better.

Frosting for cakes. I realize that I don’t usually talk about what type of frosting to use. But for me, Sometimes I don’t use frosting. I mean if I am putting the cake in a 9×13 pan I usually don’t put frosting on it.

I have found a frosting that I have been using for a while now. And it works. Even though my frosting jobs are nowhere near the bakery level artist. It has grown so much in a year.

Okay onto the frosting recipe that I have found. It comes from my favorite cookbook “Westpoint Women’s Cookbook Club.”

It’s a buttercream frosting from a lady named Mary Albina. The recipe will be in the description down below.

Beat the margarine and Crisco (or shortening) until blended.

Add the sugar in small measurements with the liquids. Which includes vanilla and milk.

Beat it until smooth.

If you happen to run out of powdered sugar. You can simply make it yourself. You just need granulated sugar and cornstarch. If you need 1 cup of powdered sugar. Combine 1 cup granulated sugar and 1 teaspoon cornstarch in a food processor. And combine them for about 3-4 minutes. It will have a different consistency to what you are used to. However, it will be powdered sugar.

Just be careful when you open the lid of the food processor because there will be a puff of sugar.

And once you are done with frosting, you have to wait until the cake is cooled completely. Otherwise, your frosting will melt off and it won’t look pretty.
