Ingredients

  • ½ cup shortening part butter or margarine
  • ¼ cup brown sugar packed
  • 1 egg separated
  • ½ tsp vanilla
  • 1 cup all-purpose flour
  • ¼ tsp salt
  • ¾ cup finely chopped nuts
  • Jelly

Directions

  • Prep Your Space: Let's get our kitchen ready for a little baking therapy! Preheat your oven to 350°F. Set aside your ungreased baking sheets, letting yourself feel present and ready to create.
  • Cream with Care: In a large bowl, thoroughly mix your shortening, sugar, egg yolk, and vanilla extract. Mix with gentle, rhythmic strokes until everything is beautifully combined and smooth.
  • Bring It Together: Gently stir your flour and salt directly into your wet mixture. Watch with care as the dry and wet ingredients slowly unite to form a soft, comforting dough.
  • Roll & Coat: Roll the dough into neat, perfect little balls using about one teaspoon for each. Give your egg white a quick, slight beat with a fork, dip each ball inside, and then gently roll it in your finely chopped nuts until beautifully coated.
  • Press & Breathe: Place your coated dough balls about 1 inch apart on your baking sheet. Take a deep breath and press your thumb gently into the center of each ball to make a perfect little well. Bake for 10 to 12 minutes just until set.
  • Fill with Joy: Let your beautiful cookies cool completely on a wire rack. Once they are ready, mindfully spoon your favorite sweet jelly into each thumbprint center to finish your therapeutic treat.
