Prep: Refrigerate the pomegranates beforehand (not required, but it helps). Remove all the seeds and place them in a colander.
Dry: Gently rinse the seeds, then lay them out on paper towels to let them dry completely so the chocolate doesn't seize.
Line: Lay out a large sheet of wax paper on a cookie sheet that fits inside your refrigerator.
Melt: Melt your chocolate chips using either a double boiler over simmering water (stirring constantly) or a glass container in the microwave in short bursts until smooth.
Combine: Add the dried pomegranate seeds to the melted chocolate and fold gently with a rubber spatula until thoroughly covered.
Scoop: Spoon out globs of the mixture onto the wax paper.
Chill: Place the cookie sheet in the refrigerator and let the clusters cool until set. Keep refrigerated; they stay fresh for 3–4 days (though they rarely last that long!).
