Ingredients

  • 1 pkgs Egg noodles
  • 4 eggs
  • Can of crushed pineapple with juice
  • 1 cup sour cream Pop says swap sour cream for Ricotta cheese
  • 1 tsp. Vanilla
  • 1 tsp. Cinnamon
  • 1 cup raisins opt. Pop says figs, dates
  • Finely chopped nuts

Directions

  • Boil your wide egg noodles until they are just tender, drain them thoroughly, and set them aside to cool slightly. Take a few deep, grounding breaths while you grease a deep 8-inch or 9-inch baking dish thoroughly to prepare it for your casserole base.
  • Combine the cooked egg noodles, eggs, crushed pineapple along with all of its sweet juice, sour cream, vanilla, and warm cinnamon directly in a large bowl or your prepared baking dish. Take your time to stir the ingredients mindfully until everything is fully incorporated and the comforting scent of holiday spices begins to fill your space.
  • Gently fold your raisins into the mixture, then top the entire surface evenly with a perfect layer of finely chopped walnuts to ensure a beautiful, rustic crunch once it bakes.
  • Cover the baking dish tightly with a lid or a layer of aluminum foil and slide it into the refrigerator for an overnight soak of at least 8 hours. Trusting this slow, essential rest gives the noodles time to absorb the rich custard while you sleep, letting you wake up to a completely stress-free Christmas morning kitchen.
  • Pull your casserole out of the refrigerator when you are ready to start your holiday celebrations and preheat the oven to 350°F (175°C). Bake the dish uncovered for exactly 1 hour until the center feels completely set and the walnut topping transforms into a beautiful, warm golden brown.
