Hey everybirdy! Fall is officially here, which means I’m breaking out the costumes. Today, I’m embracing the season as the Grim Reaper! But don’t let the dark outfit fool you—we are making something absolutely heavenly today.I recently rediscovered a gem in the West Point Women’s Cookbook called Chewy Noels. If you remember the Pound Cake recipe I shared a while back, this comes from the same book. It’s simple, classic, and exactly the kind of baking therapy we need when the days start getting shorter.
Why This is My Kind of Baking Therapy
There’s something deeply grounding about “heritage” recipes. Following the steps of bakers who came before us helps me feel connected and calm. These bars are unique because of the way the batter interacts with the butter—it’s a “trust the process” moment that teaches us to let go of control and enjoy the bake.

The Essentials You’ll Need:
- Butter: 2 tablespoons
- Eggs: 2 large (slightly beaten)
- Brown Sugar: 1 cup, packed
- Flour: 5 tablespoons
- Baking Soda: 1 teaspoon (The original recipe missed this, but 1 tsp is the magic number!)
- Salt: 1/8 teaspoon
- Chopped Nuts: 1 cup (Walnuts or pecans work beautifully)
- Vanilla Extract: 1 teaspoon
- Powdered Sugar: For dusting

Step-by-Step Instructions:
1. Prep Your Space:
Preheat your oven to 350°F.
Therapy Tip: I always preheat first. Waiting for the oven can feel restless, so getting it to temp early ensures a peaceful, even bake.
2. The Butter Base:
Melt your 2 tablespoons of butter and pour it directly into an 8×8 or 9-inch square pan. This acts as your non-stick coating and flavor base all in one!

3. Whisk the Dry Essentials:
In a small bowl, mix your flour, baking soda, and salt. Stir in the chopped nuts and set this aside.

4. Create the Heart:
In a separate bowl, combine your brown sugar, eggs, and vanilla. Mix by hand or with an electric mixer until it looks like a smooth cookie dough.
5. The “No-Stir” Pour:
Slowly fold your dry essentials into the egg mixture. Once combined, pour it over the melted butter in your pan.
Crucial Tip: Do not stir! If it needs a little help reaching the corners, gently nudge it with a spatula, but let the butter stay separate on the bottom.

6. Bake and Breathe:
Bake for 30 minutes.
Therapy Tip: Use your senses here. If the kitchen starts to smell like toasted sugar and nuts, it’s likely ready. Use the toothpick method to ensure the center isn’t doughy.

Once they’ve cooled slightly, dust them generously with powdered sugar and cut them into squares.

Robby: Everybirdy has their favorites! While the original recipe is amazing with walnuts, pecans or even slivered almonds work perfectly. If you have a nut allergy, you can try toasted sunflower seeds or just leave them out for a simpler, chewy butter bar.
Q: Why don’t I stir the batter into the melted butter?
Robby: This is the “trust the process” part of baking therapy. Leaving the butter at the bottom allows the bars to develop a slightly crisp, buttery “crust” on the outside while staying incredibly chewy on the inside.

Q: My recipe didn’t list the baking soda amount—is 1 teaspoon right?
Robby: Yes! The original West Point Women’s Cookbook left that part out, but after some kitchen testing, 1 teaspoon of baking soda is exactly what you need to give these bars the right lift and texture.
Q: How do I know when they are officially done?
Robby: Listen to your nose! When the kitchen smells like toasted sugar, it’s time to check them. They should be golden brown and a toothpick inserted in the center should come out clean (not doughy).


Chewy Noels
Ingredients
- 2 tbs. Butter
- 2 eggs slightly beaten
- 1 cup brown sugar packed
- 5 tbs. Flour
- ⅛ tsp. Salt
- 1 cup chopped nuts
- 1 tsp vanilla
- Powder sugar
Directions
- Preheat your oven to 350°F. Melt your butter (or margarine) right in your 9-inch square baking pan so it's ready and waiting at the bottom.
- In a small bowl, whisk your flour and salt together. Toss in your chopped nuts and stir to coat them, then set this dry mixture aside.
- In a separate bowl, add your packed brown sugar and vanilla extract to your slightly beaten eggs. Whisk them together until smooth, warm, and combined.
- Gently blend your dry flour and nut mixture into the wet egg mixture until just combined.
- Pour this batter directly over the melted butter in your pan. Here is the magic trick: do not stir it! Just let the batter sit right on top of the butter.
- Bake at 350°F for 30 minutes until set and beautifully golden. Let them cool completely, give them a generous, snowy dust of powdered sugar, and cut them into 9 thick, chewy bars.
