At first when I was going through this cookbook, I wasn’t going to share this recipe because the last sentence “Recipe does not double well.” Really didn’t sit well with me. But I thought about it and sometimes you just want to one loaf of bread.
Best Ever Banana Bread

Ingredients
- 1 3/4 Cup Flour $2.38 5 lb bag of flour
- 1 1/2 Cup Sugar $3.46 4 lb bag Sugar
- 1 tsp Baking Soda $0.92
- 1/2 tsp salt
- 2 Eggs Food Bank / $1.97 for a dozen
- 2 Ripe medium bananas mashed – 1 cup (Food Bank / $0.40)
- 1/2 Cup Vegetable Oil $3.97
- 1/4 cup plus 1 Tbsp buttermilk or Sour milk. regular milk + vinegar/lemon juice Food Bank / $1.72 for 1/2 Gallon
- 1 tsp vanilla $1.84
- 1 cup chopped Walnuts Food Bank / $3.36
Instructions
- In a large bowl, mix the flour, sugar, baking soda, and salt.
- In another bowl, combine eggs, bananas, oil, buttermilk, and vanilla.
- Add this to the flour mixture, stirring until combined.
- Fold in nuts.
- Pour it into a greased loaf pan.
- Bake at 325°F for 1 hour and 20 minutes.
- Makes one loaf.
- The instructions for this recipe say that it does not double well.
