At first when I was going through this cookbook, I wasn’t going to share this recipe because the last sentence “Recipe does not double well.” Really didn’t sit well with me. But I thought about it and sometimes you just want to one loaf of bread.

Best Ever Banana Bread

Ingredients

  • 1 3/4 Cup Flour $2.38 5 lb bag of flour
  • 1 1/2 Cup Sugar $3.46 4 lb bag Sugar
  • 1 tsp Baking Soda $0.92
  • 1/2 tsp salt
  • 2 Eggs Food Bank / $1.97 for a dozen
  • 2 Ripe medium bananas mashed – 1 cup (Food Bank / $0.40)
  • 1/2 Cup Vegetable Oil $3.97
  • 1/4 cup plus 1 Tbsp buttermilk or Sour milk. regular milk + vinegar/lemon juice Food Bank / $1.72 for 1/2 Gallon
  • 1 tsp vanilla $1.84
  • 1 cup chopped Walnuts Food Bank / $3.36

Instructions

  • In a large bowl, mix the flour, sugar, baking soda, and salt.
  • In another bowl, combine eggs, bananas, oil, buttermilk, and vanilla.
  • Add this to the flour mixture, stirring until combined.
  • Fold in nuts.
  • Pour it into a greased loaf pan.
  • Bake at 325°F for 1 hour and 20 minutes.
  • Makes one loaf.
  • The instructions for this recipe say that it does not double well.
