
Hello, every birdie. Today’s recipe came to me as a surprise. I don’t usually have dates in the pantry. But, David (my younger brother) came home and said that he brought dates from his volunteer gig, at the local lunch program. I swear if you all were there you would have thought that he would have brought home gold or something similar. Because it is so rare to have dates in our house.

We all love dates. And he brought home 2- 16 oz containers of dates. And Oh my gosh, they were so good. So one container was for eating and the other was going to be for this recipe.

We are going to be baking another Betty Crocker recipe. This time it comes from the 1970s Cooky Book. The recipe we are looking at is called Date Roll Drop Cookies.

The ingredients that you will need are:
- Date Filling (below)
- 1 egg
- ¾ cup hot water
- ¾ cup shortening (part butter or margarine)
- 1 cup brown sugar (packed)
- 1 ¾ cup all purpose flour
- ½ tsp Baking soda
- ½ cup Rolled oats
Date Filling:
- 3 cups cut-up dates
- ¼ cup sugar
- 1 ½ cups water
Prepare the date filling. Place the three ingredients in a saucepan. Cook over low heat, stirring constantly, until thickened, which takes about 10 minutes. Add your hot mixture. Cool before serving.
Heat the oven to 400 ℉. The recipe says to place the cookies on an ungreased cookie sheet. However, I always grease my pans. Because I have cried too many times in the past because my cookies didn’t want to leave the cookie sheet. But this is something that you as a baker have to determine what you want to do. If you want to follow the recipe 100% then that is perfectly fine.

Mix the shortening and the sugar thoroughly. Add in your egg. Next you are going to add in your dry ingredients. Which includes your: flour, soda, and salt. Add in your rolled oats.

Roll 1-inch cookies and place them 2 inches apart.

Bake for 8 to 10 minutes.

This recipe was done on two different days. On the first day, I had to imedialely drop what I was doing, because my cockatiel, Smokie (who is 20+ years old) was having a hard time breathing. We were able to get his breathing back to normal, after putting him in the AC. Thankfully, my mom put all of the ingredients in the fridge for me and I was able to make the recipe the next day.

On the second day, Smokie was doing fine and breathing normally. So I didn’t feel bad about making the cookies. It was a little scary, but he is a strong little birbie.
