
Sul Sul, Gerbits. Today we are going to be making some cinnamon rolls. I love cinnamon rolls, and I wanted to bake them.

This recipe comes from Rosanna Pansino’s Nerdy Nummies cookbook.
I like watching her videos because her recipes are so simple to follow. Even a moderate baker like myself can follow the recipe. Nothing is worse than having a recipe where you can’t follow the instructions the writer has given you.

The first thing that you are going to do is make the dough.

You are going to dissolve yeast in some warm water in a small bowl. You want to wait until it is foamy, about 5 minutes or so.

I am always so terrified of yeast. I am always scared that I might kill the yeast. And for those of you who do not know you can kill the yeast if your wet mixture (water, milk, or oil) is too hot or too cold. It has to be at a certain temperature or it will die. And that always scares me.

You are going to beat together the butter and granulated sugar until it is smooth. You can do this with an electric mixer or by hand.

After you have the butter and sugar smoothed, add your egg yolks one at a time. This is always a messy stage for me because I can only do it by the hand method. Where I separate the egg yolks from the whites with my hands. I do it that way because I am afraid that I will break the yolk in the normal way of transferring between eggshells.

Next, add the milk, cardamom, and salt until they are combined. If you don’t have cardamom in your pantry you can always use cinnamon.

Slowly add in your yeast mixture.
Then add 3 ¼ cups of flour and mix until it is well combined with the other ingredients.

Find a large surface area, large enough to knead the dough until it smooth. Don’t be afraid to add more flour if you need to.

Kneading dough is such a relaxing thing, that works every muscle in your arms and back. The first time I kneaded something I felt like a zombie the next day. But after a while of doing it, my arms and back got more used to it. And it has become extremely fun and tiring.

In a large oiled bowl, you are going to place the dough and cover it with plastic wrap. You are going to let the dough rise for about an hour, doubling the volume of the dough.

For making the filling, you are going to combine the brown sugar and cinnamon.

After your timer goes off, roll the dough on a light flour surface. In a 12 x 18 inch rectangle.

Make sure to grease a 9×13 baking pan or a cooking sheet

Brush the dough with butter and cinnamon-sugar mixture.

At the short end of the rectangle, you are going to start to roll it up into a cylinder like a shape. The only time I am ever going to use geometry in my life is to distinguish different shapes in baking.
When it is the cylinder shape, slice the dough into 12 equal parts.

Place the rolls into the pan or sheet. Once again you are going to cover with plastic wrap and let rise for 30 minutes. Until they are light and puffed.
And you can start preheating your oven to 350 degrees Farenheight.


After the 30 minutes, bake them immediately for about 20 minutes, or until they are golden brown.
You can let them sit on a wire rack until they cool completely. Or you can eat them when they are still warm.

To make the vanilla glaze you are going to combine the powdered sugar and vanilla. Slowly add the milk in until the mixture is at the consistency that you like.

My only tip for this recipe: make it the night before. Do not try to make it the day of. Because it will take you a while, and you will be making this recipe for a very long time. The result is good but it is a very long process. And nobody wants to eat breakfast at 1 in the afternoon as we did. I mean the result was good, and we had no leftovers.
