Sul Sul, Gerbits! Today is another easy recipe. We are going to be making pie crust cinnamon roll cookies. We have made pie crust cookies before but we are using some of the leftover cream cheese frostings that we used with the chocolate cake.

Pie crust is so easy to make. The only thing that you have to remember is to put it in the freezer for a little bit so that it can be more flakey.

The ingredients you need for this recipe are:

  • flour
  • salt
  • shortening
  • cold water.

As well as cinnamon sugar, and butter. The recipe will be down in the description below.

Preheat your oven to 375 degrees Fahrenheit.

In a medium-sized bowl, you are going to mix your flour and salt.

Cut in the shortening with a pastry blender or a fork, until the flour mixture looks like a bunch of small peas.

Sprinkle with cold water, about 1 tablespoon at a time. Tossing it with the pastry blender or the fork. 

You are going to do this until all the flour is moistened.

Gather all of the pie crust into a ball, and form a discus-like a shape. Wrap it with plastic wrap and put it in the freezer.

The recipe says to put it in the refrigerator for about 45 minutes. However, if you put it in the freezer, you only need to wait about 10 to 15 minutes.

While the pie crust is chilling, you can get your butter out. You can melt it if you feel you need to. And you are going to make your cinnamon sugar, Combine about one to two tablespoons of cinnamon, then add your sugar. The important thing to remember when making cinnamon sugar is that you want to have a little bit more sugar than cinnamon. 

You are going to take your pie crust out of the freezer, and take it out of the plastic wrap. Placing it onto a lightly floured surface.

With a rolling pin, you are going to roll out the pie crust. You want it to resemble the pie crust. So, you may want it thinner. 

Once you have it the thickness you want, place your butter and cinnamon sugar on the pie crust. And with a pastry knife or any type of knife, you are going to make your cookies.

With this part, I did not measure how big they were so, just eyeball it. These cookies will be small. But they will be really good.

Bake them for about 6 minutes. I know that 6 minutes seems strange, but trust me, you don’t want to go any longer.

Let them cool, then add your cream cheese frosting.

I never set off the fire alarm, but with these cookies, I set it off twice. Not because I burnt them, but because the sugar made it smokey, and they went off. 

You know you have a good cookie when you are making them and everyone comes and takes one. It’s just like “yes, I accomplished something today!” Haha, maybe that’s just me. Pie Crust

Once you learn how to make this, you will rarely go back to store-bought pie crusts.

Ingredients
  

  • 2 (250 g) cups flour
  • ⅔ (151 g) cup butter or shortening I have used both, and I like them both. But butter pie crust is going to be flakier
  • 1 tsp salt
  • Ice cold water

Method
 

  1. Add your flour and your salt to a large bowl.
  2. Cut in your butter or shortening with a pastry knife or two forks.
  3. Add in your ice-cold water 1 teaspoon at a time until no flour sticks to the side of the bowl, and everything is coming together.
  4. Wrap it in plastic wrap and place it in the freezer until you are able to use it.
  5. This only takes about 10- 15 minutes.
